Varietal Composition: 100% Vranec

Taste description:
Our Vranec is a dry red wine with a characteristic dark ruby color with
great depth and intensity. The aroma is rich and with a long finish, with
dominance of chocolate, shades of prunes, smoke and resin. The wine is with
very good structure and with strong potential to develop aromas that will give
impression of warmth and velvet in the mouth.

Food pairing:
We recommend to consume it at a temperature of 18-20 ° C with all types
red meats.


Wine analysis:
Total acids: 5.8 grams per liter
Sugars: 2 grams per liter
Alcohol: 13.5 % vol.


Harvest:
The whole year was a year of challenge. After moderate temperatures in February, the grape ripening season began with strong spring frosts, which posed a serious threat to the annual yield. Fortunately, in in summer the temperature was quite high, which is typical for the Tikvesh region. The team of grape growers and winemakers dedicated themselves to paid special attention, the wine produced from this harvest to be with special quality. Vranec was harvested during three harvests: from the 23rd to the 25th of September, from the 4th to October 6th and from October 8th to October 10th with the best possible indicators of sugars and acids in the period of technological maturity of the grapes. The grapes are picked by hand and placed in crates weighing no more than 10 kg, by selection of the best bunches. This way of collecting grapes allows complete control over the fermentation process. During the last harvest, part of the berries were semi dried, which in combination with others factors gave the wine a specific taste.

Wine making:

  •  12 hour maceration in the presence of enzymes
  • controlled alcoholic fermentation for 10 days with specific maceration regimes
  • Complete "overhaul" is done twice
  • Clarification and stabilization of wine
  • After bottling, the wine stays in the bottle for 4 months

Cabernet Sauvignon

Composition: 100% cabernet sauvignon


Description of the wine:
Our Cabernet Sauvignon is an extraordinarily dry red wine with a lively and glowing color. Harmony of aromas of roasted peppers and smoky tones in combination with berries and jam predominates in the wine. The body is full of warmth and freshness.


Food pairing:
Recommend to combine with red meat, turkey and game
temperature of 18-20 ° C.

Total acids: 6 grams per liter
Sugars: 2 grams per liter
Alcohol: 13%


Harvest:
The whole year was a year of challenge. After moderate temperatures in February, the grape growing season began with strong spring frosts, which posed a serious risk to the annual yield. Fortunately, in the summer period the temperature was quite high, which is typical for Tikvesh region. The team of vintners and winemakers dedicated themselves and committed themselves special attention, the wine produced from this harvest to be with a special quality. The grapes were harvested by hand in two periods: from September 24 to 26 and from the 4th to the 10th of October.


Wine making:

  • The grapes are ground and the stalks are divided
  • It is placed in stainless steel tanks for cold maceration, providing excellent
    development of aromas and flavors of grapes
  • 30 days of alcoholic and apple milk fermentation
  • Clarification, stabilization and bottling processes
  • The wine is left to stand in a bottle for 6 months

Prokupec

Varietal Composition: 100% procurator

Description of the wine:
Prokupec is a wine from a forgotten Balkan grape variety. Popova Kula paid special attention to this wine in order to present it again to wine lovers. This wine is a harmony of color, aroma and taste. It is characterized by a vivid ruby red color, and the fragrant aromas are a combination of cherry and cherry, while in the background a dry fig is revealed. The taste of this wine is light, harmonious and fresh. In the end, the taste of dried fruit, hazelnuts and bread crust remains. 

Food pairing:
We recommend serving it at a temperature of 16-18 ° C with light appetizers, pasta and stews.

Wine analysis:
Total acids: 5.1 grams per liter
Sugars: 1 gram per liter
Alcohol: 11,79%

Harvest:
This season was great in many ways, it was the warmest, the earliest and without a doubt one of the best seasons to develop great fruit quality. There were unusually high temperatures in February, followed by slightly colder temperatures in March, which provided excellent preconditions for the development of flavors. The summer was long, very hot, which allowed the development of higher levels of sugar than usual.

Wine making:

  • Grind the grapes and remove the stalks
  • cold maceration for 48 hours in order to extract the maximum of aromas and colored substances
  • is placed in stainless steel tanks for alcoholic fermentation and specially selected yeasts are added to obtain the characteristic aromas

Pinot Noir

Composition: 100% Pinot Noir

Taste description:
Pinot Noir is characterized by a soft red color intertwined with purple shades. The aroma is complex, and it is dominated by the gentle tones of cherry and plum, complemented by notes of spices that give the wine playfulness in the aroma. The taste is a mix of flavors of cherries, ripe plums and blueberries. Well-balanced acids and gentle tannins give the wine a long aftertaste, gentle freshness and pleasant fruity.

Food pairing:
We recommend serving it at a temperature of 16-18 ° C in combination with all kinds of cheeses, pasta, pizzas and lighter meats.

Total acids: 5.2 grams per liter
Sugars: 1 gram per liter
Alcohol: 13.6 % vol.

Harvest:

The moderately rainy winter was followed by a warm spring, which created ideal conditions for an early start to the season. Precipitation was in normal amounts and evenly distributed throughout the year. These conditions, which had the same course during the harvest, contributed to the high quality of the grapes and created excellent conditions for the expert teams from the winery. Hand harvested.

Wine making:
It is produced according to technology for creating red wines
Fermentation with whole grapes for 10 days at controlled temperature, aeration and careful selection of selected yeasts.

Zilavka

Varietal Composition: 100% Zilavka
 
Description of the wine:
Zilavka is an extraordinary white wine that is characterized by a yellow-green color with a shiny shade, characteristic of the variety. The aroma is complex, fruity and herbal dominated by the aromas of freshly mown green grass, Macedonian herbs and juicy aromas of green peach and melon. The taste is full, fresh, with a pronounced mineral character and pleasant bitterness in the finish.
Balanced acids give exceptional freshness of this wine. 
 
Food pairing:
We recommend drinking well chilled at a temperature of 10-12 ° C as aperitif, or in combination with fish, seafood and chicken, but also goes well with goat and edam cheese.

Alcohol: 13.2% vol
 
Harvest:
After moderate temperatures in February, spring and early summer are characterized by lower temperatures than usual for the Tikvesh region. In the second half of the summer we still had enough sun and heat that allow normal ripening of the grapes. Rainy weather during September led to a somewhat later harvest. The grapes were harvested in time of its technological maturity, a moment when the balance between the sugars and the acids is perfect. Hand harvested.

Sauvignon Blanc

Varietal Composition: 100% Sauvignon Blanc
 
Description of the wine: 
Sauvignon Blanc is an extraordinarily dry white wine with pale yellow and shades of green. The combination of aromas is extremely rich with the dominance of lemongrass, tropical fruits, white peaches, and citrus fruits. This wine has wonderful harmony and structure and well-balanced taste with the impression of pleasant citrus freshness and long-lasting finish.
 
Food pairing: We recommend being consumed at 10-12 ° C with chicken, fish or cheese. Also goes well in combination with
chocolate cake.
 
Wine analysis:
Total acids: 5.5 grams per liter
Sugars: 1.6 grams per liter
Alcohol: 13,5% vol.
 
Harvest:
After moderate temperatures in February, spring and early summer are characterized by lower temperatures than usual for the Tikvesh region. In the second half of the summer, we still had enough sun and heat that allow normal ripening of the grapes. Rainy weather during September led to a somewhat later harvest. The grapes were harvested in time of its technological maturity, a moment when we have ideal balance between sugars and acids. The grapes were harvested by hand, and the time of
harvesting was very early in the morning or late at night when temperatures were lower to preserve the aromas.
 
Wine making:
- The grapes are ground and placed in stainless steel maceration tanks (a process in which
which enzymes are put in to extract the aroma)

- This process lasts 6 to 8 hours at a temperature of 8 - 10 ˚C degrees
- The grape pulp is pressed, the sputum is divided into another container, it is clarified and then
selected yeasts are placed for fermentation
- Alcoholic fermentation lasts from 15-20 days at a temperature of 14-15
degrees

Muscat ottonel

Varietal Composition: 100% Muscat Ottonel
 
Description of the wine:
Muscat Ottonel is an excellent white wine with a delicate yellowish green color shades. It has intense aromas of nutmeg, orange peel, violet and acacia flower. The taste is balanced and delicate with honey notes on an exotic background. Fresh acids create the impression of pleasant playfulness in the mouth.
 
Food pairing:
We recommend consuming at 10-12 ° C as an aperitif, but also in combined with white meats, spicy Indian food, spicy Turkish dishes and young yellow cheeses. It goes well with creamy and fruit desserts, and also with ice cream.
 
Wine analysis:
Total acids: 5.6 grams per liter
Sugars: 1 gram per liter
Alcohol: 12.6% vol.
