Flavour descriptors:
Prokupec is a wine made from a forgotten balcanic grape variety that can not be found elsewhere in the world. We at Popova Kula Winery have given special attention to this wine in order to reintroduce it among the wine lovers. This wine represents a harmony of color, aroma and taste. It has a lively ruby red colour and the aromas are a combination of cherry and sour cherry while in the background the aroma of dry fig is emerging. The taste of this wine is light, harmonic and fresh. The wine concludes in a long-lasting aftertaste of dry fruit, hazelnut and a bread crust.

Food pairing: We recommend it to be served at 16-18°C with light apetizers, pasta and boiled vegetables.

Residual sugar: 1.0 g/l
Alcohol: 11.79% by vol.

Vintage:
The season was extraordinary in many ways, it was the warmest, certainly the earliest and without doubt, one of the best for fruit quality. We experience unusual warm temperatures in February, followed by cool temperatures in March, which was ideal for flavour development. The summer was long; extremely hot offering potential for developing higher sugar levels than usual.

Winemaking:

  • Grapes are crushed and destemmed while preserving the temperature below 12°C
  • cold maceration 48 hours in order to preserve the aromas and coloured materials.
  • The fruit is settled in inox tanks for fermentation in presence of specially selected yeasts.
  • The temperature is controlled during the fermentation as well as the regimes of aeration and the decreasing of the sugar levels.
  • Malolactic fermentation to fine tune acids and textural balance
  • Processes of fining and stabilization of the wine
